Improper food storage, date-marking: Chattanooga area restaurant inspection reports for the week ending Nov. 5, 2024 | Chattanooga Times Free Press

The Hamilton County, Catoosa County and Walker County health departments inspect food service establishments twice a year, grading them on a 100-point scale. Establishments are reinspected if they fail to meet critical standards. The scores are original and do not reflect on-the-spot changes, which sometimes lead to upward adjustments.

Scores for the week ending Nov. 5.

Reasons include: The cold water faucet was not functional at the kitchen hand-washing sink, soap was not present at the hand-washing sink, the kitchen and bar dish machines were not sanitizing properly, an open container of hot dogs was not date-marked, two cooked pork butts in the walk-in unit were not date-marked, there was standing water in the three-door reach-in unit, food was not stored 6 inches off the floor in the walk-in unit, gaskets in the two-door tall unit needed to be repaired or replaced, there was accumulated debris on the ventilation filters, there was a leak present in the liquor/soda storage room, there were missing floor tiles in the kitchen and the flooring in the walk-in unit was in poor repair.

Reasons include: Raw eggs were stored over ready-to-eat white sauce in the reach-in cooler, opened raw beef in the reach-in freezer was stored over ready-to-eat food items, raw eggs were stored over ready-to-eat soup in the walk-in cooler, ready-to-eat food items were stored over 24 hours without any date-marking, ready-to-eat in-house sauces were without any date-marking and several sauces, oils and ready-to-eat food items were taken out of their original container with no common name label on them.

Reasons include: There were no hand-drying provisions at the hand-washing sink in the main kitchen, the front service reach-in cooler was cold holding above proper temperatures, employee personal items were being stored over consumer items and employee personal food was stored above consumer food in the reach-in cooler.
