Grab & go salads can be found at several of our dining locations. Apart from having a variety of protein options like tofu, tuna, and chicken, each salad is prepared by our chefs in-house every morning. “Without their hard work and dedication, we would not be able to keep up with production,” said Jamie Balch, chef de cuisine at The Café and Market at Crossroads. If you’re looking for a quick and savory snack or meal for those “gotta run” days, look no further than York Street Market. Their protein power snack box contains two hard-boiled eggs, granola, artisan cheddar cheese, and grapes. If you’re looking for something that packs a punch, go with the shawarma chicken wrap or the curried cauliflower bowl served with tahini sauce and braised kale.  Find it at: Beanz, Brick City Café, The Café and Market at Crossroads, The Corner Store, The Market at Global Village (where you can find the largest variety), and the 24/7 micro markets. 

Expand your taste buds with unique hand-crafted sides from Loaded Latke. RIT’s very own kosher deli offers a rotation of traditional Jewish grab & go options. Give the knish a try, which is mashed potatoes wrapped in paper-thin pastry dough and then fried. Choose from the vegan tomato cucumber salad, or the curried chicken salad packed with kosher chicken cutlets and more than 15 distinct spices. You can pair any of the aforementioned sides with an order of loaded latkes and enjoy a truly authentic New York-style deli experience.

Nothing is as quick and tasty as a slice of pizza. Beanz has added a rotating menu of ready-to-eat flatbread pizzas. Choose from our vegan breakfast pizza, grilled cheese pizza, chicken triple bacon pizza, veggie pizza, and more. In a time crunch? Use the new ordering kiosks to get a hold of your pizza fast!

Sometimes you just need some sushi, and we have plenty of grab & go sushi that can be found around campus. Every package of sushi features fresh ingredients and is perfect for eating while studying or grabbing a quick bite before class. There are more than 15 different variations of sushi to try, such as spicy tuna rolls with sliced ginger on top, and crispy vegan tofu rolls. If you’re feeling a bit more creative, visit Hissho Sushi at The Café & Market at Crossroads to have your favorite protein and toppings hand-rolled at the made-to-order sushi and poke bowl bar located next to the sub shop. You can also grab sushi from our local partner and Visiting Chef, California Rollin’ Sushi.

Looking for plant-based options on the move? Cedar’s specialty salads are the way to go. Cedar’s is a family-owned company specializing in non-GMO salads that are healthy and hardy. “The benefit to having a plant-based meal is that the fat source comes from plants which are higher in unsaturated fatty acids. These acids lower cholesterol and could decrease your risk for heart disease if consumed regularly,” RIT’s registered dietitian Marisa Bellanca said. Try the tabbouleh salad made of tomatoes, onions, and lemon mixed in parsley, or go for the edamame version that features soy beans, roasted corn, dried cranberries, and roasted peppers.

There’s nothing better than a spoonful of smooth yogurt and slices of fresh fruit. If that’s more your speed, you will love the yogurt and fruit protein cups. “Fruit paired with Greek yogurt is a great snack because you get carbohydrates from the fruit and protein from the Greek yogurt. This will help keep you full until your next meal,” Bellanca says. The fruit cups and yogurt bowls are prepared at the start of each day by our chefs to ensure freshness. You can find a vast selection of fruit and yogurt cups around campus, packed with strawberries, raspberries, watermelon, and bananas. Or pick from several flavors of yogurt that come with granola and fruit inside each cup! The possibilities are endless.
