The gray water from the three-compartment sink is unable to empty into the grease-trap and is overflowing into the tote. The facility is using one sink at a time rather than utilizing all three as required.
Youth with a Mission Lancaster, 1932 W. Main St., Ephrata, March 5. Pass. Assorted food was held at 42-43 F, in the two-door refrigerator, rather than 41 F or below as required. The items were moved to another refrigerator for rapid chilling and storage during repairs. Observed clean food containers stored wet in a manner that does not allow for draining and/or air-drying (wet-nesting). Removed for washing and drying.
Bloomfield LC LLC - DBA Little Caesars, 235 Bloomfield Drive, Lititz, change of owner, March 4. Fail. Observed employee personal food and drink stored on a shelf with food for the business. Observed filth and food residue buildup on the inside of the freezer, the dough mixer, food crumbs and buildup observed at the floor/wall juncture throughout the facility, the underside and drainpipe of the hand-wash sink in the back and front, the plumbing and drain of the three-compartment sink, the green drainage racks above the three-compartment sink are tacky and dirty, the stainless-steel rack near the three-compartment sink is rusted and dirty, brown grime observed on the inside of the door to the walk-in cooler, old food residue and grime on the storage racks near the hot-holding cabinet. Observed old food splatter and residue buildup on all walls in the facility. The back wall of the stainless-steel table has a residue buildup. Exit door to the outside, located in the back of the food facility, is self-closing and is being propped open. Observed grime on the inside and outside of the door to the employee restroom. The door handle has grime on the inside and outside. The toilet room has trash and needs to be cleaned.
